Firm tofu offers a balance between texture and absorption, perfect for stir-fries and baked dishes. Extra-firm tofu is the densest and holds its shape well; it’s best for cubing, roasting, or pan-frying without crumbling.

Removing Excess Water: Pressing and Drying

Skipping the draining step is the most common mistake. Open the package, remove the tofu, and place it on a clean kitchen towel or paper towels. Top it with a cutting board or a light weight for 15–20 minutes. Short on time? Wrap it in paper and press gently with your hands. The goal is to remove free water so it absorbs seasoning and browns properly. For a quicker method, slice it into thick slabs and let it air-dry for 10 minutes.

Cooking Without Drying Out: Heat, Marinade, and Timing

Extra-firm tofu can turn dry if overcooked. Use medium-high heat and avoid constant stirring; let a crust form before flipping. For deep flavor, marinate for 10 minutes in a mix of 3 parts soy sauce, 1 part sesame oil, minced garlic, and a touch of maple syrup. Soy sauce adds salt and umami, the oil helps seal the surface, and the sweetener promotes caramelization. Pan-fry for 8–10 minutes or roast at 400 °F (200 °C) for 20 minutes.

Firm or extra-firm tofu is a meal-prep staple: cook a batch on Sunday, cube it, roast it, and store it in the fridge for up to 4 days. Add it to grain bowls, salads, or soups for a reliable protein boost. Keep a package on hand; it’s affordable, versatile, and adapts to whatever seasonal produce you have. Try freezing whole blocks (then thawing them) to transform the texture into something chewier and more meat-like.
