Biryani is much more than simple rice with chicken: it is an Indian culinary ritual that combines layered cooking, saffron infusions, and toasted spices. This homemade method guarantees fluffy, juicy rice with that unmistakable aroma that wins over any table.

  • 500 g chicken pieces (thigh and breast)
  • 300 g basmati rice
  • 200 ml plain unsweetened yogurt
  • 10 g saffron threads
  • 150 ml warm milk
  • 1 large onion sliced into thick rings
  • 3 garlic cloves finely minced
  • 1 piece of fresh ginger (4 cm) grated
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste
  • 80 ml sunflower oil or ghee
  • 1 cinnamon stick and 4 cloves
  • Fresh parsley and chives for garnish

  1. Step 1 Marinate 30 min

    Place chicken in a large bowl, add yogurt, garam masala, turmeric, cumin, minced garlic, and grated ginger. Mix well to coat every piece, then refrigerate for 30 minutes so spices penetrate and tenderize the muscle fibers.

  2. Step 2 Pan 10 min

    Heat oil in a wide skillet over medium-high heat and fry thick onion rings until golden and crispy. Remove with a slotted spoon, drain on paper towels, and reserve one-third for garnish and the rest for the top layer.

  3. Step 3 Cook 7 min

    Rinse basmati rice under cold water until the water runs clear. Place it in a pot with 1 liter of boiling water, add cinnamon stick, cloves, and a pinch of salt. Cook uncovered for exactly 7 minutes until al dente, drain, and set aside.

  4. Step 4 Pot / simmer 5 min

    In the same cleaned and dried pot where you cooked the rice, place the marinated chicken over medium heat. Let it release its natural juices without moving for 5 minutes, then stir with a wooden spatula until the chicken loses its raw color and seals slightly.

  5. Step 5 Assemble 3 min

    Distribute half the drained rice over the chicken, pressing gently with the back of a spoon to create a compact base. Add the remaining chicken and cover completely with the rest of the rice, creating well-defined layers without mixing anything yet.

  6. Step 6 Prep 5 min

    Pour the saffron-infused milk evenly over the rice surface, using circular motions from the center outward. This ensures the golden color and aroma distribute perfectly without compacting the lower grains.

  7. Step 7 Oven 25 min 180 °C

    Cover the pot with a tightly fitted sheet of aluminum foil before placing the metal lid to seal the steam. Cook on very low heat for 25 minutes, keeping the pot still so the dum method steams the rice and absorbs the flavors.

  8. Step 8 Rest

    Remove from heat and let the pot rest covered for 10 minutes without opening. Carefully uncover, sprinkle the reserved crispy onions, and fold gently from the bottom to avoid breaking grains before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days. To freeze, cool completely, portion, and reheat with 1 tbsp water covered in microwave or steamer.
