- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 500 g ground lamb or beef
- 1 can crushed tomatoes (400 g)
- 1 teaspoon ground cinnamon
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- For the béchamel: 80 g butter
- 80 g all-purpose flour
- 750 ml whole milk
- 3 medium eggs
- 100 g grated cheese (kefalotyri or parmesan)
- Freshly grated nutmeg to taste

Preheat the oven to 190 °C and slice the eggplants into half-centimeter rounds. Brush lightly with oil and roast on a baking sheet for 20 minutes per side until tender and golden. This step is essential to remove excess moisture and prevent the moussaka from becoming watery.
- Step 2 Pan 6 min
Meanwhile, in a large skillet, heat two tablespoons of olive oil over medium heat and sauté the chopped onion for five minutes until translucent. Add the minced garlic and cook for one more minute without letting it burn to avoid bitterness in the base.

Add the ground meat to the skillet and break it up with a spatula until it loses its raw color. Pour in the crushed tomatoes, cinnamon, thyme, salt, and pepper; stir well and let it simmer on low heat for 25 minutes so the flavors meld and the liquid reduces.
