- 200 g flour
- 2 eggs
- 250 ml milk
- 1 tbsp sugar
- 1 tbsp honey
- 20 g butter

- Step 1 Mix 5 min
In a bowl, whisk flour with sugar and a pinch of salt. Make a well, add eggs and lukewarm milk little by little until you have a smooth batter with no lumps. Rest 5 minutes so the flour hydrates and the pancakes stay fluffy.
- Step 2 Pan 2 min
Heat a non-stick pan over medium heat with a little butter. Pour one ladle of batter per pancake, about 10 cm wide. Cook 2-3 minutes per side until bubbles form on top and the base is golden; do not press with the spatula or you will lose lift.
- Step 3 Serve
Stack pancakes on a plate and keep warm under a clean towel while you finish the batch. Serve with honey or maple syrup and an extra knob of butter if you like.
