- 400 g brown lentils
- 1 large onion
- 1 carrot
- 1 green bell pepper
- 2 tbsp sweet paprika
- 1.5 l broth or water
- Olive oil and salt
Step by step

- Step 1 Marinate 30 min
Soak lentils 30 minutes in cold water (optional but speeds cooking) and drain.
- Step 2 Pan 8 min
Sauté chopped onion, carrot and pepper in oil over medium heat for 8 minutes until tender and lightly golden.
- Step 3 Mix
Add paprika, stir 30 seconds and pour in lentils with hot broth or water to cover by two fingers.
- Step 4 Pot / simmer 37 min
Simmer over medium heat 35-40 minutes, stirring occasionally, until lentils are tender. Adjust salt and rest 5 minutes before serving.
