  • 400 g brown lentils
  • 1 large onion
  • 1 carrot
  • 1 green bell pepper
  • 2 tbsp sweet paprika
  • 1.5 l broth or water
  • Olive oil and salt

Step by step

  1. Step 1 Marinate 30 min

    Soak lentils 30 minutes in cold water (optional but speeds cooking) and drain.

  2. Step 2 Pan 8 min

    Sauté chopped onion, carrot and pepper in oil over medium heat for 8 minutes until tender and lightly golden.

  3. Step 3 Mix

    Add paprika, stir 30 seconds and pour in lentils with hot broth or water to cover by two fingers.

  4. Step 4 Pot / simmer 37 min

    Simmer over medium heat 35-40 minutes, stirring occasionally, until lentils are tender. Adjust salt and rest 5 minutes before serving.

Storage

Consumir preferiblemente el mismo día; refrigerar hasta 48 h.

Chef tips

  • Add paprika off high heat so it does not turn bitter.
  • If it thickens too much, loosen with a little hot broth.
  • Even better the next day when flavours meld.
