- 2 medium eggplants
- 500g cherry tomatoes
- 3 garlic cloves
- 100g ricotta salata
- Extra virgin olive oil

Cut the eggplant into two-centimeter cubes, sprinkle generously with coarse salt over a colander, and let them drain for twenty minutes to extract excess moisture and bitterness.
- Step 2 Pan 8 min
Toss the cubes lightly in flour and fry them in a skillet with extra virgin olive oil over medium-high heat for eight minutes, flipping until they form a golden, crispy crust.
- Step 3 Pot / simmer 15 min
In the same skillet, sauté three thinly sliced garlic cloves and add five hundred grams of halved cherry tomatoes; simmer on low heat for fifteen minutes until a thick, aromatic sauce forms.
- Step 4 Cook 10 min
Boil four hundred grams of spaghetti in plenty of salted water in a large pot for ten minutes, reserving half a cup of the starchy cooking liquid before draining the pasta al dente.
- Step 5 Mix 2 min
Add the drained pasta to the skillet with the tomato sauce, pour in the reserved water, and toss vigorously for two minutes so the starches emulsify and coat every strand evenly.
- Step 6 Serve
Turn off the heat, divide into deep bowls, sprinkle with grated ricotta salata, and garnish with fresh basil leaves before serving immediately to preserve the warm, creamy texture.
