- 4 eggs
- 250 g sliced mushrooms
- 80 g diced serrano ham
- 2 tbsp olive oil
- Salt and pepper

Clean mushrooms with a damp cloth and slice. Sauté in a little oil over medium-high heat 4-5 minutes until they release moisture and brown.

Add ham strips and toss 1 minute. Set aside on a plate.

Beat eggs with salt. In the same pan over low heat, scramble until creamy.
