- 400 g spaghetti
- 6 garlic cloves
- 1 dried chili (optional)
- 100 ml extra virgin olive oil
- Fresh parsley and salt

- Step 1 Cook
Cook spaghetti in salted water until al dente. Reserve a cup of cooking water before draining.
- Step 2 Pan 1 min
In a wide pan, warm olive oil over medium-low heat with sliced garlic and chilli. Cook 1-2 minutes until garlic is golden but not burnt.
- Step 3 Prep 1 min
Add drained spaghetti and a splash of cooking water. Toss 1-2 minutes so oil and starch emulsify.
- Step 4 Serve
Off the heat, add chopped parsley and serve immediately. A drizzle of raw oil at the end boosts aroma.
