- 4 large free-range eggs, room temperature
- 3 medium potatoes (Kennebec or Monalisa type, approx. 600g)
- 1 large medium onion (optional but recommended)

Peel the potatoes and slice them into thin rounds of about 3 millimeters thick to ensure they cook evenly without burning. Peel the onion as well and cut it into folds or strips that are not too thick.

Heat plenty of extra virgin olive oil in a large skillet over medium-high heat; when hot but not smoking, add the potatoes and onions. Fry this mixture for about 12-15 minutes, stirring gently every few minutes so they don't stick to the bottom. The goal is to achieve a tender, translucent finish rather than a crunchy, dark fry.

Once the potatoes are cooked but still firm, drain them carefully over a colander allowing excess oil to fall; you don't need to save it all for the pan later. Transfer the drained potatoes and onion to a large bowl and mix with a generous pinch of coarse salt. Let this mixture rest for about two minutes, as this helps the starches absorb some liquid. Then beat the eggs in another bowl slightly (without foam) and gently fold them into the potato mixture.

Heat a ladleful of the reserved oil or a little new oil in a non-stick pan of appropriate size (approx. 24 cm diameter). Pour the entire egg and potato mixture into the pan, ensuring it distributes evenly. Cook over low heat for about five minutes without touching too much; the low heat allows the eggs to set slowly underneath while the top remains slightly moist.

Place a flat plate wider than your pan's diameter over it, press firmly with one hand to ensure contact, and give a quick, dry flip with your wrist to turn the omelette. Then slide the partially cooked omelette back into the pan, using a spatula if necessary so the potatoes don't crumble. Cook the newly exposed side for another four or five minutes over medium-low heat.

Carefully slide the whole omelette onto a flat serving plate or wooden board. Let it rest for two minutes before cutting into wedges; this brief rest allows flavors to settle and texture to stabilize. Serve warm or at room temperature, optionally accompanied by a simple green salad.
