  • 300 g cold cooked rice
  • 2 eggs
  • 80 g diced ham
  • 100 g peas (fresh or frozen)
  • 1 small carrot, diced
  • 2 tbsp olive oil and soy sauce

Step by step

  1. Step 1 Cook

    Cook rice according to the pack, drain and spread on a tray to cool and separate grains (day-old rice works best).

  2. Step 2 Pan

    Beat eggs with salt and make a thin omelette; dice it. Sauté diced ham or chicken strips until golden.

  3. Step 3 Pan 2 min

    In a wok or wide pan over high heat, stir-fry rice with a little oil for 2 minutes. Add peas, egg, protein and soy sauce to taste.

  4. Step 4 Serve 2 min

    Toss vigorously 2-3 minutes until everything is hot and well mixed. Serve immediately.

Storage

  • Cold separated rice is the secret; fresh rice turns gluey.
  • High heat and little oil mimic restaurant wok hei.
  • A splash of sesame oil at the end adds aroma.
